The culinary style at Teatro is Italian. But there's a twist. Our
Executive Chef Romuald Coladon was raised and trained in France. He
brings to Italian Cooking the hallmarks of the cooking he learned in
his homeland; simplicity, a light-handed style and a commitment to
the finest ingredients.
Suppliers
to Teatro are selected only after Chef Romuald has toured
their facility. Preference is given to small, local
operations. Our salads are made from greens so well
tended they are sung to; you can taste the love that
has gone into the growing. Some of our select suppliers
consist of:
Lamb from Driview Farms of Fort MacLeod, Alberta
Pork from Broek Pork Acres of Coalhurst, Alberta
Alberta raised, grass fed beef, dry-aged in our own
lockers
Alberta farm venison
Free Range Chickens
Lobster & Crab are tanked in-house to ensure freshness
Organic vegetables - many from heirloom
seeds
Tomatoes
from Gull Valley
Truffles, dry porcini mushrooms, and figs hand selected
in Italy by our proprietor
All pastas are hand made, in house
All bread is baked in house
Desserts are from our own pastry kitchen, including
Tiramisu from our proprietor's
mother's
recipe
La Martinozze Olive Oil
- Our Le
Martinozze olive oil is a rare taste indeed - since
it is grown and pressed exclusively for us on Teatro
owner Dario's family farm in the Marche region of Italy.
It is first cold press oil with low acidity and a soft,
fruity taste.
